Red Velvet Cookies


1 box Red Velvet Cake Mix
1/3 c Oil
2 large Eggs, room temperature
1 c White Chocolate Chips
Preheat oven to 350 degrees. Line 2 large cookie sheets with silicon baking sheets and set aside. In large mixing bowl, add cake mix, oil, and eggs. Mix until fully combined. Add in white chocolate chips and fold into dough until well combined. Scoop 2 tablespoon sized balls of dough onto prepared baking sheets, making sure to leave room between each one to spread out. Bake for 10-12 minutes or until tops of cookies are set. Remove from oven and allow to cool about 5-10 minutes on the baking sheets then transfer to wire racks to finish cooling.
